Oven Roasted Corned Beef and Cabbage
Corned Beef Pot Roast

This pot roast take on corned beef and cabbage is a little misleading, but the presentation is as tasteful as the meal. The corned beef, cabbage and carrots are all slightly preboiled/precooked before placed in a roasting pan and put in the oven. This limits the cooking time in the oven allowing for the corned beef pot roast to be cooked in a couple hours instead of several.
Note: The corned beef is layered on top of the cabbage so that the cabbage absorbs the flavor of the corned beef. This lessens the need for salty seasoning to be added to the cabbage.
